A town that schedules around the festivals

Diwali, Navratri, Holi and Pongal are not niche requests in Dayton, Kendall Park and Monmouth Junction — they are the busiest weeks of our year here, and the halls book out before the caterers do. If you are planning a festival event, the venue is usually the constraint, not the kitchen.

Alongside the festivals run the ordinary ones: poojas, housewarmings, first birthdays, graduations, and school and association functions that need to feed three hundred people inside a fixed programme.

Feeding a hall on a schedule

Programme events have a hard rule: the food is served in the gap, or it is served cold. We plan backwards from the schedule — arrival snacks and chai during registration, the buffet opening the minute the programme breaks, dessert and coffee while the room is being reset.

For three hundred guests that means enough serving lines that the queue clears inside twenty minutes. Two lines for a hundred and fifty, four for three hundred, with the vegetarian line first and separate.

What families here order

A broad vegetarian spine — paneer, a dal, a dry sabzi, chana — with one or two meat entrées, a biryani, breads coming out in rounds, and a chaat counter if the budget stretches. Jain, satvik and no-onion-no-garlic options are routine.

Desserts matter more here than in a corporate brief: gulab jamun and rasmalai as standard, with a dessert table for the larger occasions.
